Simone Ambrosini
Indomiti - Veneto, Vicenza, Italy
50% Sauvignon, 50% Pinot Bianco - 12% abv
All of Simone's wines have a beautiful little story that tells something about his journey as a winemaker. As the process to find vines, a cellar and also the investment to start such a project is a great triumph and one that comes with many challenges.
'Ramingo' means the nomad, the traveller.
This wine is described as 'a breath of fresh air', as it is very clean, free and mineral. There are hints of must like flavours and a finish of sesame seeds. You should chill this wine, but not too cold as you will miss out on the full journey.
It's delicate and should be consumed in stages. i.e chill it to around 8 degrees celsius and then leave it out of the fridge to see how it expresses itself.
