The Solera system is commonly known when making sherry in Spain. The idea is that the oldest wine is located at the bottom, and the youngest wine is located at the top. At each racking, the wines go down one level, and mixed with the previous wine from previous years.
With this collaboration between Philippe Brand and SOMA VINES, the adopted technique was also adapted to create this beautiful wine. Philippe made a perpetual reserve and we called it Solera. This cuvée started with the Pinot Blanc 2015, then the following years Silvaner 2016 and Chardonnay 2017 were added. This created layers of the older vintage at the bottom of the Foudre (a very large barrel), followed by the younger vintages on top.
The nose will make you believe that the wine has been oxidised, similar to a white wine "non ouillé" from Jura, The palate is complex and ever evolving. With hints of over ripened exotic fruits followed by great freshness and mouthwatering acidity.
This wine is better served in a decanter as it benefits from the exposure of oxygen. Chill it to around 10 degrees celsius. It will even stand its ground for 2 days or more after opening.
Great to pair it with Comté cheese or a rich mushroom risotto.
