Cinabre 2020 is a wine made from vines in the commune of St Etienne des Oullières. This wine has been produced organically (uncertified) since 2015 in the region of Beaujolais. The Gamay grapes come from two different vineyard plots. One part from 25 year old vines and the other from 60 year old vines. They are located on Granite clay-sand soil and exposed to the South-West.
For the winemaking process, the whole bunches of grapes were placed in a stainless steel vat (30hl). Remontage happened once a day during 2 weeks of maceration. After pressing (vertical wooden press), the wine was transferred into stainless tanks for 8 months. No sulphur was added during the winemaking process.
This new vintage shows off a more fresh and fruity style than the previous year. Packed with black cherries and some crunchy acidity. You’ll appreciate the wine even more if you let it breathe a little beforehand. It won’t last until the next day though, so drink it all :)
