Flora is an incredible woman who taught herself how to make wine. She is usually ploughing the land of other winemakers with her horse, but in 2018 she began to make her own wine.
'Au Pif' is made with carbonic maceration for 18 days in fibre tanks, then pressed and matured back into fibre tanks.
A big blackberry burst on the palate with hints of sweet and herbal spices. Light tannins that are washed away from the CO2 explosion. You get to experience the flavours of a fuller bodied wine, but without the heavy, dry sensation on the palate as the carbonic maceration keeps the wine fresh and flowing.
Best served with a slight chill on the bottle. Pair with slow cooked beef or a vegetable stew. We like to drink it without any food at all ;)
