The grapes are pressed in a Pneumatic press. Fermentation in stainless steel tanks.
Aged for 70 months in 228-litre barrels, without topping up the wine in barrel and kept in an untempered room in the attic.
The legal age requirement to make a Vin Jaune is 6 years and 3 months under flor.
Flor is a film of yeast that grows over the wine, protecting it partially (but not totally) from oxidation. In Jura, this film is called the voile (veil), but it is similar to the more familiar "flor" in Sherry production. Historically the bottle size alludes to the amount of wine left over after six years of ageing and evaporation.
Yellow in colour and nutty and curry like in flavour. Lots of freshness. Medium acidity.
This wine is for the serious yeast lovers.
Paired nicely with coq au vin jaune, comté cheese or curry. Serve between 13 - 15 degrees celsius. You can leave this wine open for weeks and it will still taste good.
