100% Silvaner - 12% abv

On the 20th of October 2021 we picked the Silvaner in a beautiful vineyard close to Eckelsheim. Whole bunches of grapes were transferred into a maceration tank and left to undergo full carbonic maceration for 4 weeks. We didn't do any pump over, the wine was left to do its thing. After pressing, the juice was transferred into a stainless steel tank to finish fermentation.
On the 4th December 2021 the wine was transferred into old oak barrels from Jura using gravity.
This is exotic, with a creamy mouthfeel, fresh and elegant with a lightly stewed tea characteristic. There is a slight effervescence on the tongue, which gradually fade away with a little exposure to oxygen. This is one to try, it's interesting in so many ways.
All of our wines are zero zero.
Serve chilled and we recommend decanting beforehand.
