Harvested on September 3rd, spontaneously fermented in steel, 5 days of skin contact, aged 5 months between one ceramic barrel, three old barriques and a steel tank. Blended and bottled without clarification and filtration, left to age in the cellar for 4 months.
Sweet spice, apricots and peaches. Very elegant and soft, with a good amount of acidity to keep a freshness on the palate.
Serve chilled and pair with foods that aren't so intense. Without food also allows you to fully experience this delicate skin contact wine.
