Cyrille Vuilloud, La Dernière Goutte
Vaux-en-Beaujolais, France
100% Gamay - 14.5% abv
Cyrille purchased some Gamay grapes from the elite appellation that is the Morgon region within Beaujolais.
The grapes have undergone carbonic maceration for 26 days and then aged in new oak barriques for 6 months.
This wine from Cyrille has an upbeat acidity with more forest fruits and black tea on the palate. Not to be mistaken for any old Gamay, this wine has enough structure and depth to stand its ground.
Adding a slight chill to this wine will tone down the fuller bodied mouthfeel. It will open up with a little exposure to oxygen, but it doesn't last the next day.
