65% Chardonnay, 35% Savagnin - 13.5% abv
Whole bunched grapes are pressed. After pressing the Chardonnay and Savagnin are blended together to co-ferment. Spontaneous fermentation happens in oak barrels with the grapes indigenous yeast. Aged for 18 months on its fine lees in wood. Regular topping up throughout the ageing process.
On the nose hints of fresh herbs, honey and a little toasty.
The palate shows characteristics of lychees, bitter gooseberries and exotic fruits. Medium body with flowing acidity.
Pairs nicely with grilled fish or white meat. Serve between 10 - 13 degrees celsius. Still tastes great the next day.
