Made low intervention in the cellar. No added sulfites, no filtration, no fining. Harvested with machine.
Fermented and aged in a concrete tank.
Although bottled in a sparkling wine bottle, this wine is completely still.
The palate brings juicy red and black berries, gentle tannins, and a fresh line of acidity that keeps everything lifted. A savoury edge with a splash of minerality. A Pinot that can go the distance, but doesn’t take itself too seriously.
Pair with a mushroom dish, lentils or pork belly.
