100% Muscat - 11.5% abv
Sitting Bulles is about 90% Muscat Petit Grain. It's pressed and starts to ferment in stainless steel tanks. Once the fermentation starts, they cool it a little bit to slow down the fermentation. After 4 or 5 days they add about 10% of Muscat Alexandrie in whole bunches and it's left to macerate for 1 week.
When there's about 14 grams of residual sugar left, the wine is cooled down as much as possible and then bottled. The residual sugar finishes in the bottle and disgorged in March.
Dry, salty, floral, unripe pears, powerful acidity with a creamy feel in the mouth. Perfect match with spicy foods, but also a very yummy bottle to start with.
Opening instructions: If you have any problems to open the bottle by hand, then use a tire- bouchon (bottle opener), like you would when opening a bottle of wine.
