This cuvée is produced by a friend of Philippe's called Guillaume, a young winemaker from the village of Ergersheim who is launching himself into natural winemaking.
Macerated with hand-picked whole grapes for 10 days. Fermented and matured for 8 months in 450 ltr old oak barrels.
Organic grapes, without any addition of oenological products, sulphites, no fining, nor filtration.
Le Bleu 2020 is more of a fuller bodied Pinot Noir compared to Philippe's previous vintages. The palate has some violet notes with hints of floral and light tannins. You could try popping it in the fridge for 20 minutes before serving to bring out its inner freshness.
Drink it the same day as opening. It won't last the night.
A great wine to pair with roasted beetroot and eggplant, duck or beef stew.
