This is a blend between the Pinot Noir and Pinot Gris grapes.
On Tuesday 5th of October 2021 we picked the Pinot Noir from Dorn Dürkheim in Rheinhessen. With some light foot stamping on the grapes to great a carbonic maceration over 6 days. Gentle pump over during the week of fermentation. Within a few days the Pinot Noir was dry. The wine started its ageing process in stainless steel tanks and for the winter period it was ageing in 500l old oak barrels.
On the 6th October 2021, the Pinot Gris was harvested in Ergersheim, Alsace. We bought the grapes from Philippe Brand's vineyard and they are in fact the same grapes we used for Crossing Borders 2020 Pet Nat.
2 weeks skin contact, semi carbonic and lot's of remontage.
The two wines were blended after they finished fermentation in separate tanks, then aged together in old oak barrels.
There is a lot of freshness in this wine. With a beautiful balance between the red berry burst and structure from the Pinot Gris and the acidity and elegance from the Pinot Noir, you'll be happy you bought more than one bottle.
Our wines are zero zero and you can enjoy them over a course of a few days. This wine tastes even better the next day.
Serve slightly chilled and we recommend decanting beforehand.
