100% Gamay - 12.5% abv
Cinabre 2019 is a wine made from vines in the commune of St Etienne des Oullières. This wine has been produced organically (uncertified) since 2015 in the region of Beaujolais. The Gamay grapes come from two different vineyard plots. One part from 25 year old vines and the other from 60 year old vines. They are located on Granite clay-sand soil and exposed to the South-West.
The 19 vintage was generally hot and very dry. The vines were under water stress from mid-July onwards, but finally the storms in August saved the acidity of the wines. This gives a well balanced vintage between aromatic strength and drinkability.
For the winemaking process, the whole bunches of grapes were placed in a stainless steel vat (30hl). Remontage happened once a day during 3 weeks of maceration. After pressing (vertical wooden press), the wine was transferred into 5 barrels (3 new and 2 old) for 8 months. The wines were then blended together for 2 months in a stainless steel tank before bottling. No sulphur was added during the winemaking process.
Black cherries, rich and fruity, packed with acidity and a slight grip on the teeth (silky tannins). Long lasting length that keeps your taste buds tingling for another sip.
