40% Syrah, 40% Cinsault, 20% Mourvèdre - 11.5% abv
This Syrah is pressed like a rosé, then Cinsault and Mourvèdre grapes are tossed (whole cluster) into the fermenting juice for 4 - 5 days, without extraction. The wine is then pressed, and kept in a stainless steel tank.
Berry burst, crunchy acidity, light and fruity. This is such a yummy vintage of Ché Chauvio and a must try.
Best served with a slight chill to the bottle.
