Another master piece from Filippo. This description is in detail with the technical approach of how he makes his wines, as I think it's also important to get a better understanding into the effort that's put into making his elegant Syrah's.
Harvested on August 19th and 20th, spontaneously whole–cluster (75%) fermented in concrete, 20 days of skin contact (juice and skins mingle), aged separately for 18 months in two old barriques, one 5 HL terracotta amphora and one 20 HL concrete vat. Bottled without clarification and filtration, left to age in the cellar for 6 months.
And after this process you get a wine that tastes savoury, playful, aromatic and crisp.
