On the 3rd of October 2022 we picked the Silvaner grapes from Andi Mann's vineyard in Eckelsheim. 25 year old vines on sandstone soil, farmed organically.
Whole bunches of grapes were transferred into a tank and left to undergo full carbonic maceration for 3 weeks.
After pressing, the juice was transferred into old 500L barrels to finish fermentation.
No added sulphites.
This is exotic, with a creamy mouthfeel, fresh and elegant with a lightly stewed tea characteristic.
Serve chilled.
